Chili “Pigs” in a Blanket

As a mom continuously on the search for exciting new recipes, with kids who are hungry every five minutes during the summer, I was pleased when I was scrolling through facebook for inspiration and saw a picture of something that even I would eat!

You guys already know the tradition here: Sundays are family days where we love to try something new for dinner and dessert! Summer time is no exception! What’s more traditional than chili dogs in the summer?

These were a hit with even my pickiest eater, so parents, please take note!

My husband had bought jalapeno cheddar sausage specifically for me (my taste buds thanked him) but I used regular Johnsonville brats for his and the kids’. The recipe that I saw said to use cheddar sticks and crescent rolls as well, but I decided to make this my own but using what I had – a can of jumbo biscuits and shredded cheddar.

14 oz can of chili
1 can of jumbo biscuits (Pillsbury or the off-brand, we used Safeway’s brand)
8 Brats or sausages
Shredded cheese (we used cheddar, but make it your own)
Butter

The directions are very simple:

  1. Preheat oven to 375, and spray oven safe glass container with Pam or whichever cooking spray you prefer
  2. Empty the chili into a pot and heat on the stove. Once it’s heated, pour it into the glass container
  3. Unroll the dough and flatten each biscuit. Pour a hefty amount of shredded cheese along the middle, followed by a brat or sausage, and wrap the dough around. Pinch the dough together, and then place seam-down atop the chili. Do this for the rest of your brats.
  4. Place the dish in the oven and cook for 15 minutes or until the dough looks golden brown, then smear the stick of butter atop the biscuit (add parsley or garlic powder to the butter and melt it prior to this as an option)
  5. It’s ready to eat. Enjoy!

No Junk January

Every month I’m doing a special challenge. Something that will push me to my limits. I’m someone who has a violent relationship with food, so naturally I need to start the new year with a bang.

January is a month where despite restrictions, I want to harness my inner mental health heroine. This month is a HUGE mental challenge for me. My eating disorder is not allowed to resurface this month, this year, and hopefully not ever again.

My own PERSONAL rules:

  • No fried food, salty or sweet stuff (cookies, pretzels, chips, candy), nothing with added sugar or salt (i.e. if it doesn’t need it for baking or cooking purposes, it’s a no), fast food is a big no (unless salads are optional), no alcohol
  • Photograph meals and snacks, to be posted at the end of each week
  • Measure every Monday
  • Cardio 4-5x/week
  • Legs-centric month

My body goals are to build my running legs for later 2018 challenges. I want to lose an inch of fat overall (so half an inch per thigh), but measurements are hard to determine especially with muscle growth vs fat loss. I’ll be taking body progress photos every week, but I probably won’t post until the end of the month. ANYWAY, enough rambling that I know you probably aren’t interested in hearing…

Recently we went through all of the boxes we packed from my apartment when I moved here, and there really wasn’t as much as I thought. But what there was a lot of was clothes! I mean, I had 2 suitcases and a duffle bag of clothes that I thought wouldn’t fit for a looooong time. I was happily wrong!

Monday Check-In: FAT LOSS

Another week down and my progress is finally evident! I might have mentioned, or maybe I didn’t, that this month my focus would be on my arms and back. DISCLAIMER: That does not mean I’m only doing arm and back related workouts; I’m just more focused on those area considering that’s where my weaknesses are.

I’ve been doing 3 arm/back days a week and it’s starting to pay off. I don’t have nearly as many progress pictures as I would like but this one is something special.

Yesterday, I measured around my right bicep. You can imagine my shock and awe when I saw that I had dropped from 13 inches to 11.5! I started focusing more on these areas on July 25th, which makes that a good 2 week progress. My goal was to be down to 11 inches by October, so I think I’ll make it in good time! Let’s see if I can zap that half an inch over the next 2 weeks!

In other areas, I’ve lost about half an inch around my hips. I haven’t focused nearly as much on my midsection as I probably should. I definitely put my booty over my abs, but next month my challenge will be to shrink down 2 inches around my hips.

Second DISCLAIMER: Those of you who follow my youtube videos will notice that I don’t have a “progress” video… I do, but due to how I feel about clutter and multiple uploads per day/week, my progress video won’t be going up until the following Monday. This Monday I have my recipe video of my delicious breakfast sandwich. The perks of working in food service is learning how to do that stuff at home!

Monday Check-In!

In addition to doing my youtube videos, I’ll be posting with a little more depth into my journey. So hold onto your pants guys, this should be very interesting and entertaining.

This past week has been a rough one. I lost a friend who apparently never had any interest in us even being friends in the first place and befriended me to try and screw up my relationship (not realizing how honest my significant other is with me… about everything, literally). I can delve into that a little bit deeper, but until I have a moment to organize my thoughts on that, I’m letting it sit and stew in the corner.
